How to capture multiple choices in php

I was wondering how to capture multiple options passed through html forms in php.
For instance, if I offer a list of 20 items to my site's visitors in html checkboxes. How do I use php to capture the multiple choices selected by the visitor?
Is it possible by php or should I depend on javascript?
